Assembling Tall Tiers On A Wedding Cake

I'm retired and I make the odd cake for other people. I do it more as a hobby than a business. Stacked tiered cakes lend themselves to decoration on the sides of the cake rather than on the top. Can I put two cakes together for each tier, and if so, do I put a board between them in order to make sure the cake stays level all the way up?

Answer:

Yes, you should put two or three cakes together for each tier but you do not need to put a board between the layers.

You should, however, put a board under each tier. The boards should be the exact same diameter as that tier, ice the cake on the board first and then put it on top of the tier beneath it.

Before stacking the tiers, place three dowels the exact height of the tier below to help reinforce the tier for added support.

The only tier that does not require any dowels is the top tier.
