Baking A Wedding Cake - 11 Inch Fruit Cake

I am baking a wedding cake. It is an 11" sq fruit cake. Different recipes are giving 8hrs, 5hrs and 6hrs as baking times. I am not sure which to use and I do not want to test the cake in case of fruit sinking- any solid answer would be great.

Answer:

It is best to use the cooking time of whichever recipe you choose to bake. Different recipes will have different moisture content and therefore there is no hard or fast rule about cooking times.

For the recipe that we use the cooking times are 2 ½hrs (150°C) then 5 ½ hrs (120°C) for an 11 inch square fruit cake.

If your concern is because you are scaling your recipe an 11” square fruit cake will have the same cooking time as a 12” round one.

When baking a wedding cake of this size it is best to place a double layer of parchment covering the top of the cake after the first two hours of baking. The cake is done when it is firm to the touch and a skewer inserted in the middle comes out clean.
