Buttercream Icing Quanities For A Wedding Cake

Someone has suggested that crusting buttercream icing on to a cake would be best for sticking chocolate cigarillos onto a three tier wedding cake. What quantities of buttercream would I need for filling and icing a 12" chocolate sponge, a 10" lemon sponge and an 8" carrot cake please?

Answer:

Buttercream is often used as a base under cakes that are decorated with cigarillos. If added to the icing before it starts to harden a strong bond is created that keeps your decorations in place.

Assuming that your cake layers are round you will need a total of 4 quantities of buttercream for the 12 inch layer (to sandwich and cover), 3 quantities for the 10 inch layer and 2 quantities for the 8 inch layer. One quantity is 700g (200g of butter and 500g of icing sugar).

It is best to find a recipe that will yield a little bit extra as opposed to having too little. Any extra buttercream can be frozen for up to three months. Defrost in the refrigerator and gently whip up before using. You may need to add a little icing sugar to get it to the proper consistency. It’s great to have handy for cupcakes.
