How To Make A Cupcake Wedding CakeA cupcake wedding cake is one of the simplest wedding cakes to make and best of all a cupcake tower will always impress. The basic cupcake recipe is easy, so it's simple even for a beginner. Even if you feel the fear with decorating them, you can make them look stunning in the array of fancy cupcake wrappers available these days. The recipe below is for around 24 cupcakes. You'll probably need a lot more than that at your wedding though, so consider asking some friends to help out. I'd recommend 1 cupcake per person. You can make them up to a week in advance and you should store them in an airtight container in a cool dark place. When serving your cupcake wedding cake, don't feel you have to stack all the cupcakes in a pile in one go. You can simply stack up some of them and then add to them as the pile dwindles. This will prevent the scary 'mountain' of cupcakes! Alternatively, you could pile enough cupcakes on a plate for the guests at each table – this would also make a great centrepiece! So for the basics on how to make cupcakes, here's a really simple recipe: The ingredients used in this video are: * 180g butter* 180g caster sugar * 3 medium eggs, beaten * 1 tsp vanilla essence * 180 g self-raising flour * ½ tsp baking powder * 1 Tbsp milk * 500g icing sugar, sifted * 5 Tbsp water * food colouring as desired To decorate your cupcake wedding cake, you could get adventurous with the icing or frosting as well as the little toppers. Standard icing has been used in the video, but for a more American style cupcake, why not try frosting? Frosting comes in all sorts of flavours, with the basic one being vanilla buttercream, but you can really go to town with colours and other flavours too. So don't be afraid to try something different (lemon and lime, peanutbutter or marshmallow) or match your cake decoration to your wedding colours. Piping frosting is super easy. It'll only take a couple of goes and you'll be an expert. All you need is a piping bag, star nozzle and spatula to get started. (If you're using frosting, try to frost the cupcakes the day before, don't store them with the frosting on). For something a bit more glam, you can use fancy paper wrappers on your cupcake wedding cake.
