DIY Wedding Cupcakes

I have decided on baking and decorating 170 individual cup cakes for my wedding reception as an alternative to a wedding cake, as I can't afford £300 plus!

I have tried out 4 flavours, lemon, vanilla, caramel and chocolate, and 8 diffrent toppings based on butter cream icing (lemon, vanilla, coffee, chocolate, white choc, caramel, strawberry, orange).

I plan on doing simple sugar flowers to decorate,which can be purchased really cheaply (try eBay) and presented in silver cases on old fashioned cake stands (also purchased on eBay).

I have costed the lot and it works out at about £35 for everything. I will bake the cakes in batches and freeze running up to the wedding (June 20th) and decorate on mass a day or 2 before (with help!!). They stay fresh for a few days as I have experimented with this also. This way everyone will get their own cake of choice, and I will have lots of fun!

You can do it even cheaper

Buy your cup cakes already made using (TESCO`S OR ASDA ) own basic range you get a dozen in a pack.
Make your own icing and add your own flavour. Then just pipe out your intials on each one. For 100 covers you can do it for less then a tenner.

Wedding Cupcakes

Thanks for all the hints and tips, i am going to attempt to make my own wedding cupcakes to save some cash!

I will try out the recipe given on this page and will let you know how I get on once they are frozen and thawed!

I'm getting married in December so I have given myself plenty of time to practice, wish me luck!

I was delighted when my daughter Gemma sent me this link.
Gem and john are getting amrried Easter weekend.
I am baking cup cakes for about 200 guests.
They are getting married in the Lakes which means transporting the cakes 200 miles and freezing in advance (yikes).
Thanks for the tips. I am spending this Wednesday testing recipes. Will let you know how I get on. Fingers crossed.

Success with freezing

I have made chocolate, coffee, carrot and plain cupcakes, using different recipes and makes of muffin cases and frozen them successfully, by waiting until they were cold and putting them in a sealed plastic container. They have never come away from the cake cases when defrosted. Perhaps you are over baking, i.e. spongecake mixtures shrink away from the side of the tin when cooked for too long. I have also frozen successfully when decorated, i.e. cream cheese for carrot and butter icing for the other flavours. I have not tried the metallic cases.

Freezing Cupcakes - Solution!

I've just defrosted a batch of cupcakes which I made last week. The book I'm using recommends freezing them the day you make them in airtight containers (without icing). This worked a treat! The cases stayed firmly to the little cakes.

If you're still having the problem with the cases, then perhaps it's the particular recipe that's being used. I used the recipe below which is really easy:
8oz self raising flour
8oz caster sugar
8oz unsalted butter
1tsp vanilla essence
1tsp baking powder
4 eggs
Place all ingredients into a bowl and mix with an electric hand whisk until well mixed and creamy. Spoon into a muffin tray lined with muffin cases and bake for 20 mins at 175c (gas mark 4). Allow to cool in the tray for 5 mins and then place the cakes on a rack.

Freeze as soon as possible, once cooled.

Makes 18 large cupcakes, about 24 fairy cakes.

This recipe is taken from Fergal Connolly's 500 Muffins and Cupcakes
- a great little book with lots of lovely cupcake recipes and plenty of tips! There are also loads of ideas for frosting and icing.

Cupcake cases

I am planning to make and freeze cupcakes for my daughter's wedding in July. I tried a test batch and froze them for a week. When defrosted the cases came away from the cake. How can I get round this problem? I notice someone else has mentioned this.

Freezing Tips

My wedding is also June 20th and I am also making a cupcake tower. I have researched freezing and apparently the key is leaving them until they are barely cool, wrapping them x3 in cling and then x1 in foil. I'm trying Angel food with lemon buttercream frosting today! Good luck!

Bake 'em fresh

I'd recommend baking them so they're fresh if you can. They'll taste a lot better as well!

I make wedding cakes for a living, just one problem with freezing cup cakes - they come away from the cases once defrosted and I haven't found a way around this problem

Cheap cake idea

My sister is getting married next weekend and they have got our 11 year old nefew to make the cake. This not only makes it cheaper but also gives it more character.
