Gluten Free Wedding Cake

I am making a gluten free wedding cake. How far in advance can a gluten free fruit cake be made, the marzipan applied, and iced. Is it the same as a usual fruit cake?

Thankfully, it is becoming easier to find recipes for delicious gluten free foods, including those that can be used for wedding cakes.

Your gluten free cake can be made well in advance, up to three months, as you would a usual fruit cake. Leaving the lining paper it was baked in on, wrap the cake in baking parchment and then foil. Store in a cake box in a cool, dry place.

Feed your gluten free wedding cake at intervals for the first two to three weeks by pouring a few teaspoons of brandy into holes you have punctured into the cake with a skewer or darning needle. Then allow the cake to mature for at least for several weeks.



It is possible to apply marzipan to your gluten free wedding cake 3 weeks in advance of your wedding date. The fondant icing can be applied up to five days before the wedding day, although the nearer the day the better it will be.
