How Deep To Make A Wedding Cake

How deep should I make a wedding cake if I would like a fruit and Madeira cake for my wedding? I am having a 12" round fruit cake with a 10" and 8" round Madeira stacked on top.

Since cake depth will not affect the number of servings you get from a cake, deciding the depth of your wedding cake is largely a matter of personal preference, the style or effect you want from your cake.

For ease a 3” inch depth is a good choice. The cake tins are more common and therefore easier to find and recipes are generally for this depth, so less adjustments will need to be made.

4” deep layers are becoming more common and give a more dramatic look. To make a wedding cake with layers of this depth you can use a 4” tin or 2 X 2” tins for your madeira cake if you are adding a filling. It is even more important at this depth to make sure your recipes are scaled properly and to remember to turn your fruitcake every three to four hours to ensure the centre cooks evenly.
