How Long Will A Sponge Iced Wedding Cake Last

I was due to get married in December but due to heavy snow we had to cancel, I am now looking at getting married in March/April time. My friend had a wedding cake made for us and it seems a shame to waste it, so I was wondering if anyone could tell me how long I am able to keep it for?

I am so sorry to hear that your wedding day has had to be postponed.

Many couples like to keep a layer of their wedding cake to be eaten on their first anniversary. They do this by freezing the cake layer. Fruit cakes freeze well, but those that have tried freezing an iced sponge cake have done so with varying results.

Also, as your wedding cake was prepared for a December wedding, and it is now a couple weeks later, the ideal time (within 5 days of baking) to do this has already passed.

This is the method for freezing your cake that would give you the most success. This is not something that I have personally tried with an iced sponge cake, but I believe it is possible.
It is a good idea to have a backup plan in case you are not happy with the results.



Disassemble your cake into individual layers. Remove any decorations, ribbons etc. Put the layers separately in the freezer, uncovered until the icing freezes. Remove the layers and wrap each one individually in plastic wrap. Add a layer of aluminium foil and finish off with another layer of plastic wrap.

To thaw, uncover and let it return to room temperature. If the cake was covered properly the icing should be intact. If your cake was covered in fondant and you detect any damage or ice on the outside layer you can remove just the fondant layer and reapply. Reassemble your cake once thawed and add any ribbons or decoration. Serve.
