How Much Marizpan And Icing For 12", 10" and 8" Cakes

Answer:

You will need the following amount of each to ice a 3 tier round cake made up of a 12”, 10” and 8” layer.

Sugarpaste Icing Quantities
12” cake = 2.1kg (4lb 10oz) for the cake and 950g (2lb 2oz) for the board

10” cake = 1.5kg (3lb 8oz) for the cake and 650g (1lb 7oz) for the board

8” cake = 1.0kg (2lb 4oz) for the cake and 420g (15oz) for the board

This will give you a nice 5mm (1/4in) thickness of each on your cake and a 3mm thick icing covering each base.

Marzipan Quantities
12” cake = 1.75kg (3lb 8oz) for the cake

10” cake = 1.25kg (2lb 12oz) for the cake

8” cake = 800g (1lb 12oz) for the cake

This will give you a nice 5mm (1/4in) thickness of marzipan on each of your cakes.

 


First cover all your cake boards, roll the icing to 3mm and cover each of the plywood cake boards. This should be done before icing your cakes. Then, beginning with the largest cake first marzipan and ice your way to the smallest, this allows you to rework the left over trimmings from each cake on the next tier.

Leave the marzipan to set overnight before putting on your plastique.
