How To Make A Very Deep Sided Wedding Cake

I'm trying to find how to make a very deep sided wedding (fruit) cake. My niece had chosen a picture of a very deep sided peach cake and although I've made many wedding cakes, none have had such deep sides.

The picture of this cake makes it look like it’s at least 6 to 8 inches deep. Even with greaseproof paper in the tins, I'll not get it to support a mixture that high?


Answer:

You’re right, it will be nearly impossible to get the support that you would need for a mixture that high.

Professional bakers get the look of a deep cake by stacking 2 or 3 thinner cakes on top of one another and then icing them as one deep tier.

I suggest putting some marzipan between each of the thin layers to act as glue to hold them together. Once you ice it, it will give you the look of a deep sided wedding cake. Good luck!

IT LOOKED OK FROM THE OUTSIDE!

Hi, It did work using fruit cakes but was very heavy using marzipan to seperate them. From the finished item, all the cakes stacked onto each other and covered with sugarpaste it looked fantastic, just like her picture but when it was cut, it didn't!

As long as your guests like marzipan you should have great comment's? I wouldn't keep what's left over for very long, without taking the marzipan off,leaving the fruit cake to mature. If I can find a way to add a photo of the wedding cake, I'll post it on this site?

I too need to make a deep sided wedding cake, my own in fact and like you I have made a few cakes in my time, but I see the cake I want to make and pondered the same question.

How did you achieve this in the end?
