How To Stack A Wedding Cake

I would like to know how to stack a wedding cake. I am making a 2 tier Madeira wedding cake, one on top of the other, and I have been advised to use doweling support as they also want marzipan and icing. Should I stand the top cake on a thin board and how early can I bake the cake? From Norfolk

Stacking a wedding cake by placing layers directly on top of one another is a simple and easy way to create an elegant cake. Often simple ribbons, fresh flowers or simple sugar paste decorations are all they need for a finishing touch.

How to stack a wedding cake

Adding dowels when stacking a wedding cake is always a good idea for extra support even when your cake is only two layers. Use 4 to 6 dowels depending on the size of your layers. Stick the dowels into the bottom layer, mark with a pencil where the dowel is flush with the top of the layer. Cut all of the dowels to the height of the longest dowel, and then stick them in the layer. The top layer should be placed on a thin cardboard cake board, which will rest on top of the dowels.

When to bake the cake

A Madeira wedding cake will be fine for few days, but no more than four. If you would prefer to bake your cake further in advance Madeira cake freezes well. After it has cooled, simply place the cake in an airtight container and then put it in the freezer. It can remain there for up to three months. Before icing the cake make sure it is fully defrosted and at room temperature.
