How To Stop The Icing Being Pulled Off?

by P Whittaker
(Great Britain)

I am making the cake myself and I need to know how to assemble it. The 3 cakes are standing directly on each other. What if anything do you place between the layers to stop the icing being pulled off when the cake is cut?

Answer:

When you stack any cakes on top of one another, it's essential that you use separator plates or cake boards between the layers along with dowels. This is to prevent the cake from sinking into itself.

Although many cakes look like they're stacked, more often than not, it's an illusion and between the layers are boards and dowels.

You can find out how to stack a wedding cake here.

To stop the icing being pulled off between the layers, you could ensure that dowels sit just above the top of the icing (only by 1-2mm). It's important not to leave too much of a gap, just enough to allow the cake to almost float on top of the layer below. Since the cake is not flush with layer below, the icing shouldn't be pulled off. Once the tiers are removed though, you should expect some mess!

All the best

Nicola
