How To Store A Wedding Cake With Marzipan And Fondant?

by Melissa
(Burlington, ON, Canada)

How do I store a wedding cake that I have made. It is a fruit cake which has matured for a month I will be applying the marzipan today. Can you tell me what I need to do for storage at this point? Next week I will add the fondant 3 days before the wedding. Again, can you please let me know the correct storage for the cake?
Thanks

Answer:

Marzipan can be applied up to 3 weeks before the wedding date and fondant icing 5 days before the wedding date.

Store your marzipan covered cake in a cake box in a cool dry place.

When the fondant icing is applied also store the cake in a cake box in a cool dry place.

This protects it from humidity and sunlight which can degrade the icing on your cake. Also do not store the cake in the fridge.

I hope that this helps.
