How To Store And Transport A Wedding Cake?

I am baking a 3 tier wedding cake for someone who lives in a different city to me. I would like to know what is the best way of storing fruit cakes which have been marzipaned and covered in sugar paste icing prior to the wedding.
In terms of transportation, which is the best way to try to ensure that the cake arrives at its destination in one piece?

Answer:

To be at its best the iced cake should be stored unrefrigerated for no more than three days, so it is always best to ice the cakes as close to the day as possible.

However fruit cakes will keep well for several months so you could make the fruit cake several weeks before, store in an air tight container (continuing to feed with brandy if you like) and then ice a few days before.

Ideally, you should store them in air tight cake boxes to keep them free of dust or damage. You can transport a wedding cake assembled or stacked, but it’s safer to transport the tiers separately. Find out more on how to transport your wedding cake.
