Icing A Mixed Three Tier Wedding Cake

I am making a 3 tier wedding cake, bottom layer fruit the 2 other layers sponge. Should the sponge cakes be covered in marzipan like the fruit cake as I was hoping to use ready made roll out icing?

Answer:

With ready rolled icing, you can use it with or without marzipan.

For the sponge cakes, Silver Spoon recommend that you should brush the sponge cakes with boiled apricot jam first. This is so the icing can easily manoeuvred into position and it has something to stick to.

If the fruit cake has marzipan on it, then dampen the marzipan slightly with water first. Again, this will help the icing stick to the cake.
