Marzipan And Icing Timescale

I'm icing my sister's wedding cake with ready to roll royal icing and will be putting a layer of marzipan on first. How long does the marzipan need to be on before I can put the icing on? Will the icing dry out if it's left too long? Would it matter if the marzipan is applied three weeks before the wedding, and the icing a few days before?

Answer:

If your cake contains a filling that is perishable the cake should be stored in the refrigerator and iced the day before. If not marzipan icing can be applied up to 3 weeks before the wedding date without suffering any ill effects if stored properly.

Royal icing can be applied up to 2 weeks before the wedding date. You should allow at least 24 hours after applying your marzipan layer before applying your royal icing to allow for drying.

When it is time to put on your royal icing rehydrate your marzipan layer by brushing on a thin layer of sherry, brandy or boiled water. This helps adhesion and preserves the layers by preventing air to get in between. Store your cake in a cake box in a cool, dark place.
