Marzipan Freshness

I’ve put marzipan on my wedding cakes and I will be applying the fondant icing in a few days time. I am aware I need to add alcohol or boiling water just before doing this but do I need to do this in between days as well so that it keeps or not?

Answer:

One of the advantages to having marzipan on your cake is that it stores well with no fuss. It protects your cake from suffering any ill effects from moisture that would cause it to spoil.

Therefore, it is best that it be kept dry as long as possible. It is not necessary to hydrate the marzipan until you are ready to apply the fondant.

It is best that fondant is allowed to set firmly at least overnight before adding any additional decorations. Once the cake is covered and decorated store in a cake tin in a cool, dry place for up to 4 days before the wedding day.
