Answer:

The choice of cake is really up to you and your step daughter. I'd speak to her to find out if she has a preference in the type of cake.

In terms of ease, both types of wedding cakes have their pros and cons. Fruit cake is easier to get right as there's little rising to do and you can always ensure it tastes great by 'feeding' it lots after it's cooked. For me, I find them a bit safer as they're generally more sturdy and solid and I like that in a wedding cake. With sponge, making sure it rises well and cooks well can be tricky. The decoration is also a bit more difficult as the cake is more susceptible to damage.

Whichever you choose, I'm sure the cake will be fabulous, just make sure you practice lots!

All the best

Nicola

Fruit versus sponge
by: Patricia

I did four tiers of fruit (it was mega heavy!) but that is what my daughter in law wanted and it was a great idea because we were able to give pieces to those who couldn't come to the wedding and we even posted some in little boxes to South Africa and New Zealand!

If the bride wants to keep the top tier for the first anniversary or Christening, that tier must be fruit.

Fruit is traditional and less stressful because you make it three months or so before the wedding and feed it with brandy or, in our case, Cointreau. Yum!
