Sponge or Fruit Wedding Cake?

I am making a wedding cake for my step daughter and I don't know if I should do a sponge or fruit cake. Please help!

Answer:

The choice of cake is really up to you and your step daughter. I'd speak to her to find out if she has a preference in the type of cake.

In terms of ease, both types of wedding cakes have their pros and cons. Fruit cake is easier to get right as there's little rising to do and you can always ensure it tastes great by 'feeding' it lots after it's cooked. For me, I find them a bit safer as they're generally more sturdy and solid and I like that in a wedding cake. With sponge, making sure it rises well and cooks well can be tricky. The decoration is also a bit more difficult as the cake is more susceptible to damage.

Whichever you choose, I'm sure the cake will be fabulous, just make sure you practice lots!
