Answer:

The suitcase cake is a popular novelty wedding cake especially with more couples marrying abroad and then having a reception once they return home or for those going abroad for their honeymoon.

It is difficult to answer your question without knowing how many guests the cake needs to serve.

When determining the size of cakes you will need to consider the following: a 8" x 12" cake will serve 24 if cut into 2" square pieces. A 12" x 16" cake will serve 48 and a 16" x 24" cake will serve 96 if cut into 2 x 2 inch pieces. If you want to tier the cake, then generally a 3-4 inch difference between tiers would be appropriate.

Oblong tins will give you the desired dimensions of the cake. Then shape the cake by rounding the corners slightly. This is best done with a serrated knife after the cake has been cooled in the refrigerator.

Alternatively if you only have square tins, cut the square cake into the desired size.

Good luck!
