Using A Sponge Middle Layer On A 3 Tier Cake

I am making a wedding cake for a friend and she would like the 12" bottom and 6" top layer to be a fruit cake and the 9" middle layer to be a sponge. The design also calls for the cakes to be stacked on top of each other. How can i achieve this without flattening my sponge?

Sadly one problem with this layer combination is that the weight of the fruitcake will likely cause it to crush your sponge cake.

The other issue is a problem of weight distribution. Having a heavier layer on the top and a lighter layer below will make it more likely that your cake will become uneven or the top layer may even slide off, especially when being transported.

Using a cake stand would eliminate the need for stacking the cakes directly on top of each other but may interfere with the design of the cake.

The best option would be to rearrange your placement of the cake layers. You could put your two fruitcakes on the bottom with the sponge on top or to have one fruitcake on the bottom with two sponge cakes on top.

 


Another alternative would be to have the wedding cake made entirely of fruitcake with an additional sponge cake hidden away just for cutting and eating.
