My Cake – A Traditional Wedding Cake Recipe

I’m more of a traditional girl at heart and so wanted a nice traditional wedding cake recipe. I’m not huge cake person and fruit cake is one of the few cakes I really like.

Luckily for me, around the same time I was getting married, my best friend was also getting married. Rachel’s mother was making her a rich fruit cake for her wedding and since Rachel’s mother is like an aunt to me, I asked if she’d make my wedding cake at the same time. She kindly said “yes” and that took away my worries about the cake.

My mum, Anne and my wedding cakeMy mum and Rachel’s mum are also very good friends, so my mum joined in by providing the kitchen and between the two of them they created two beautiful wedding cakes. Mine was round and Rachel’s was square. Other than that the basic wedding cakes were identical and our respective mother’s decorated their cakes with pride.

The wedding cake recipe they used was from "Good Housekeeping" Cookery Book: The Cook's Classic Companion (Good Housekeeping Institute)– a bible for all things cooking! There were complete instructions and handy hints, plus scalable information for different size tins.

The making of the cakes was certainly fun and games. There was even a few arguments along the way, but that could have been because ´too many cooks spoil the broth´. Every time I visited my parents’ house in the run up to the weddings I’d get the latest instalment of the cake saga!

I think the secret to a good cake is the feeding of the brandy. This is what makes the cake rich, moist and full of flavour. It’s essential not to skimp on this part.

The moral of the story is that making a wedding cake is a big ordeal. You need a big cake (or layers of wedding cakes) to feed all your guests, lots of time, lots of energy, lots of patience and lots of skill. Which is why I suppose you can easily fork out around £3 per portion (do the calculations yourself!) when getting it made by someone else.
