When To Fondant Ice A Wedding Cake

I have made a rich fruit cake about five weeks ago for my wedding in August 2010, I have about three weeks until the wedding. I have now applied the marzipan and was wondering when can I apply the roll out icing? .

One of the benefits of a fruit cake with marzipan and fondant icing is that it can be prepared in advance and stores well. That is one less thing to think about in the day before the wedding.

After applying your marzipan layer, the fondant icing can be applied up to five days before the wedding day, although the nearer the day the better it will be.

Rehydrate your marzipan layer with warm water, brandy or sherry to add a seal between the layers. This will prevent any air getting in and causing deterioration. It will also help the fondant to stick better to the marzipan.

Store your cake in a cake box in a cool dark place.
