When To Make A Fruit Cake And How Best To Store It?

I am getting ready to bake the fruit cakes for the four tier wedding cake I am making for my son's wedding. I have two questions:

1. Does it make any difference if they are baked two or three months in advance?
2. How should I store the cakes for the months before I am ready to ice them please?

Answer:

One of the best things about fruit cake is that it tastes best when it’s made several months in advance. This gives you time to feed the cake (with brandy) so it will be extra moist and delicious.

It’s especially great for a wedding cake because you can make it so far in advance without having to rush at the last minute just before the wedding.

Spirit based cakes can be stored months in advance in a cool place.

Wrap the cake in plastic wrap and foil then place it in a cake tin or plastic container. Spoon the brandy onto the cake periodically (once or twice a week) for up to a month to feed it. Find out more about feeding a wedding cake.
