One of the great things about having a fruit cake for the wedding is the amount of time it can be made in advance, reducing the number of things that need to be done right before the wedding day. Here is a timeline for baking, feeding and icing your cake.



The fruitcake should be baked no less than one month in advance but ideally it should be closer to three. A fruitcake that is not made well in advance will still taste good but may crumble when cut, which is fine for a family celebration but not what one wants for a wedding cake.
Once a week add three teaspoons of brandy to your cake for flavour and to make your cake nice and moist.

The marzipan icing layer can be applied to the cake three weeks in advance. It must be applied at least 24 hours before adding the fondant. Put the fondant on your cake up to five days before the wedding.
